The structure of vitamin C is similar to glucose, which is a kind of polyhydroxy compound, it has the property of acid, also known as ascorbic acid.Vitamin C has a strong reducibility and is easily oxidized into dehydrovitamin C, but its reaction is reversible, and ascorbic acid and dehydroascorbic acid have the same physiological function, but if dehydroascorbic acid continues to be oxidized and diketogluconic acid is generated, the reaction is irreversible and completely loses its physiological efficiency.
